Happy new year! Here’s a big laugh - unbeknownst to me, in three week I’ll be celebrating my first year of officially sending a newsletter! Despite the few months I took off on holiday, this is where I’ve been sending updates about my art life & where you can find my work, and at baseline, that’s the purpose of a newsletter. I’ve always avoided / procrastinated / [insert excuse here] starting one, even though I’ve been collecting emails for years - so this is a big life goal achieved, completely without my knowledge.
My readers expressed how much they missed my Substack after I decided to close it, which made me realize how much I missed it. Y’all are the best, really! So I’m back, however I’ll be using this platform to link out to my work on my blog {which is actually getting updated somewhat regularly okkkr}. You can always follow along on instagram for sneak peaks of works in progress and process vids.

In efforts to re-center my original intention of this project around it’s namesake, I thought I’d share my rundown of 2022’s Best Bites, and they just so happen to all feature caviar.
Third place: Blondery’s OG Cake Jar
Last February I wrote about this dessert before I ever ate it, it only took a few days before I could no longer resist taking the decadent, 9-ish layer plunge myself. It was a rollercoaster of textures, densities, crunch, cream and chocolate caviar. Don’t let the size fool you, there’s so much packed in the jumbo sized glass gars and it’s so rich - two people can easily split one or one person has incredible leftovers to look forward to. I’m a sucker for a viral desserts and this one absolutely lives up to the hype!
Second place: Ko | Momofuku - Kaluga Caviar, Ranch & Quadruple-Fried Chicken

First Place: EL Ideas - mini Ceaser salad, dressing inside the crouton, topped with Golden Ossetra Caviar; served without flatware
The end of the road for taste bud sabotage and cheeky fun, EL Ideas was our grand return to tasting menus in the spring. The music was every bit as integrated and purposeful as a wine paring would be, complimenting the waves of transcendent sensory overload exploding in our mouths with every bite. Having never been instructed to eat without utensils, I felt like I was in a real life Buñuel film - surrounded by stylish people licking off their plates and trying not to choke on laughter between bites.
Honorable mentions goes to Chef Phillip Foss’s French Fries & Frosty: Impossibly crunchy potatoes in a milkshake glass with hot potato leek soup and vanilla ice cream reverse poached in liquid nitrogen. I cried at my table when the spoon, both hot and cold, landed upon my tongue. Tiny tears streamed down my cheeks to Radiohead and I remember thinking to myself “I survived a fucking pandemic just to eat this bite.” It was a golden moment, a highlight of the year.
I’ll be doing a deep dive into both of these restaurants in upcoming newsletters to give context to my next short film, which will be about tasting menus.
